Taking Some Sick Days!

Hello, friends! Just a quick note to explain the lack of blog posts this week. On Sunday night, I started having severe stomach pains. Thinking it was a kidney stone, on Monday morning my doctor advised me to go to the ER as it would be faster to get x-rays and blood work there. Well, while I found out that I do have a kidney stone, the pain was actually from  infectious colitis AND a bladder infection! And due to a genetic condition I have where I have a very weak immune system, I was admitted to the hospital for IV antibiotics.

Let me tell you where you don’t want to be when you are sick: the hospital! The uncomfortable bed, the noise, the constant poking and prodding; needless to say, I couldn’t sleep. Fortunately, I was released today and switched to oral antibiotics; it’s so good to be HOME!

While I’m doing better, I’m still feeling pretty sick; therefore, I’m going to take a few more days off from both blogging and YouTube so that I can rest. I’m aiming for starting up work again on Monday, so I’ll be back with all of the coupons, deals, and freebies before you know it!

And for those of you who left get well wishes on Facebook and Instagram: THANK YOU! I read every single one, and they really meant a lot. Papa did pretty well while I was in the hospital, except for the fact that he only ate chocolate muffins while I was gone! Hopefully I can rectify that now that I’m home! 🙂

Recipe of the Day: POTATO SALAD!

My brother makes the best potato salad; unfortunately, he doesn’t write down recipes, they are all just in his head. He gave me the basic ingredients for his potato salad, and I’ve refined it to the recipe below. This is a very adaptable recipe. Don’t like celery? Leave it out (I do, although my dad likes it in his, so sometimes I cut up a bit extra for his serving). I also leave the eggs yolks out of mine; again, my dad likes the yolks, so I sometimes save them for him.

This makes a HUGE batch, but you can easily halve it if you’d like. Note that for 5 pounds of potatoes that I start with 1/2 cup condensed milk but will add more if needed. I also like to sprinkle paprika on the top for decoration!



  • 5 pounds of potatoes, boiled (peeled or leave the skins on – I personally like to leave the skins on for a bit of extra nutrition and flavor)
  • Celery, chopped (optional)
  • 6 hard-boiled eggs, chopped (you can remove the yolks if you want to reduce the cholesterol or if you just don’t like the taste)
  • 1 onion, chopped; or 6 tablespoons dried onion flakes
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise or Miracle Whip
  • 1/2 cup sweetened condensed milk
  • 1/4 cup yellow mustard
  • Dash of salt and pepper


  • Boil potatoes and allow to cool. Cut into bite-sized pieces.
  • Mix eggs, onion, sour cream, mayonnaise, sweetened condensed milk, mustard, salt and pepper together.
  • Add in cooled potatoes and mix to coat.
  • Chill, garnish with paprika (if desired) and serve.


Holiday Tipping Guide!


Christmas is right around the corner; and while you are busy buying gifts for family and friends, it’s important to remember to tip the people who regularly provide you with services.

Often the most confusing part of tipping isn’t figuring out how much to tip but WHO to tip. When it comes to the holidays, you want to tip people who provide a service to you on a regular basis, either weekly or monthly. So if you get your haircut every month, you will want to tip your stylist. However, if you only get a trim a couple times a year, you can skip a year end tip.

Here are some basic guidelines when it comes to holiday tipping:

Babysitters: The cash or gift card equivalent of one night of babysitting services (the average of what they usually sit for).

Barbers & Hairstylists: The cash or gift card equivalent of one service appointment.

Lawncare: If you have someone who regularly mows your lawn and/or shovels your driveway, give them the cash or gift card equivalent of one service appointment.

Mail Carrier: The USPS prohibits cash gifts and gifts valued over $10. A gift card between $5-10 is appropriate depending on how much interaction you have with your carrier and if they go above and beyond for you (delivering/picking up lots of packages). Gift cards to coffee shops and restaurants are a great gift for postal carriers.

Newspaper Delivery People: The cash or gift card equivalent of a one-one month subscription.

Teachers: Teachers get so much STUFF at the holidays. While its tempting to load up your child’s teacher with scented candles and chocolates, a much more appreciated gift is that of a gift card to an office supply store (as so many teachers have to buy their own supplies), coffee shop, or restaurants.

Again, only tip those who REGULARLY provide you with services. Also, stick to cash or gift cards as opposed to actual gifts as tips make up a big part of a service providers actual income.

With so many restaurants offering gift card deals (I’ve seen specials from Applebee’s, Texas Roadhouse, and even local establishments) this time of year, it’s easy to make your tipping budget stretch further. Sam’s Club, for one, offers gift card bundles at a discount. I bought a package of Old Chicago gift cards at Sam’s Club; there were four $25 cards in a pack and they were 20% off!

Here’s wishing you and yours a safe and happy Labor Day Weekend! The deals go quiet on holidays, so I’ll be off, too. Well, I’ll still be working on Ebay, but that’s another story, haha! And with all of the Labor Day sales going on, I may just go out to do some deal shopping myself.
