RECIPE: Lasagna Roll-Ups!


Lasagna Roll-Ups are a fun twist to a classic Italian dish! Rather than laying noodles, sauce and cheese, with roll-ups you spoon the cheese mixture onto the noodles, roll the noodles up, assemble them in a pan, and then pour the sauce on top. This version is a lot easier to serve than traditional lasagna as everyone gets there own roll-up!

Note that this recipe makes 12 roll-ups; if you want to double it, you can; just note you’ll need two pans.



  • 12 lasagna noodles, cooked and drained
  • 1 large jar of pasta sauce (I use my Homemade Pasta Sauce)
  • 15 ounces part-skim ricotta cheese
  • 1 egg, beaten
  • dash of salt
  • 2 cups of shredded mozzarella cheese


  1. Preheat oven to 350 degrees
  2. Boil noodles according to package direction; drain and rinse with cold water
  3. In a bowl, mix together the ricotta cheese, egg, salt, and 1 cup of the mozzarella
  4. Pour a layer of pasta sauce into the bottom of an 9×15-inch pan
  5. Lay out a noodle and spread some of the cheese mixture on top; roll up and place into the pan seam side down. Continue making the rest of the roll-ups.
  6. Pour remaining sauce on top of roll-ups
  7. Top with remaining mozzarella cheese
  8. Cover with foil and bake for 30 minutes
  9. Remove foil and leave in a few more minutes to ensure all of the cheese on the top melts.
