RECIPE: Easy 6-Ingredient Slow Cooker Pot Roast!

My dad LOVES pot roast, but he rarely gets it as I don’t eat it. However, I found this recipe for EASY pot roast in the crock pot and decided to give it a try. You can also do the prep work the night before and just plug in your crock pot in the morning. I seared the meat and placed it on a plate in the fridge. Then I cut the vegetables and put them in a baggie with the soup mix and water. In the morning, I just poured it all into the crock pot. This takes a full 10 hours to cook, so you’ll need to start early in order for this to be ready for dinner.

Another tip is to make sure to trim the fat off of the meat before cooking. Trust me, you’ll be so happy when you aren’t pulling nasty gristle out of your mouth during dinner! I also cut the roast into smaller pieces, which really helped it cook thoroughly as opposed to keeping it in one big chuck of meat. Be sure to scroll all the way to the bottom of this post to watch a how-to video I filmed for this recipe, too! 🙂

  • 4 pounds of chuck roast, trimmed of fat and cut into 4-6 smaller pieces
  • 1 packet of dry onion soup mix
  • 1 cup of water
  • 3 carrots (I just threw in a handful of mini carrots)
  • 1 onion, chopped
  • 3 potatoes, cubed (you can peel the potatoes if you want to, but I just left the skins on)
  • 1 stalk of celery, chopped

  1. Season the meat with salt and pepper. In a large skillet, brown each piece on all sides (about 4 minutes per side).
  2. Place the roast in the slow cooker. Pour the soup mix, water, carrots, onion, potatoes, and celery on top.
  3. Cover and cook on LOW for 10 hours.
